Kitchen Adventures: Sinigang na Hipon sa Sampaloc


I am back with my kitchen adventures. Now I would like to share one of the easiest meal we can have especially for those who are always on the go – Sinigang na Hipon sa Sampaloc. 

You will need:
¼ kilo shrimp
1 medium size onion
1 thumb-size ginder
3 pieces medium sized tomato
1 medium size radish (labanos) peeled and sliced diagonally ¼” think
1 bundle of kangkong leaves (water spinach)
3 pieces of siling pansigang (green chili)
Calamansi juice or tamarind extract
Dash of salt
Optional Veggies: Okra, Eggplant

How to prepare:
Place the tomato, ginger, onion and salt in a saucepan or casserole with about 1 liter of water and wait until it boils. Lower the heat, add shrimps and radish, and let it simmer for about 5 minutes. Then add the kangkong and let it simmer for another minute before adding tamarind extract or calamansi juice. Simmer for half minute and serve while hot.

Notes:
1. Best to have this with hot and steamy rice and fish sauce (patis).
2. If you are using tamarind fruit, add it together with the shrimps and radish. Remove before adding the kangkong leaves squeeze out the juice. You may also opt to use ready-made tamarind soup based sauce or powder which are readily available in the market.
